Let’s make homemade Mayo without using Vegetable/seed oils (polyunsaturated fats) as the main ingredients.

You will need:

200g Avocado Oil

1 Egg room temperature

1tsp Apple sider vinegar

1tsp mustard (without added sugar)

Pinch of salt


Add all ingredients to a tall container and blend with an immersion blender until thick consistency. That’s it! Your homemade Mayo is ready! Store it in a sealed jar in a fridge.
Tip: The taste will depend on the quality of your ingredients. You can use olive oil instead of avocado oil, but it will taste more bitter. The mustard may add some bitterness also. You may try to add some sweetener in this case. It also can be less thick if you choose to use olive oil, depending on the quality of your oil. You have to experiment with your ingredients.
